— MAKES 4 BIG OR 6 SMALL BITES
6 MEDJOOL DATES (1/2 CUP), PITTED AND SOAKED
1 TBSP COCONUT OIL
A PINCH OF SEA SALT
FOR COCONUT MIXTURE
1 TBSP COCONUT OIL, MELTED
6 TBSP (1/4 CUP) COCONUT MILK
1 CUP (100 G) DESICCATED COCONUT, UNSWEETENED
1 TBSP COCONUT SUGAR
1 - Soak dates in water for at least an hour (or half an hour if
using warm water).
2 - Make caramel. Add dates to a food processor (you can save soaking water to drink or blend in a smoothie) with coconut oil
and sea salt. Blend until it forms a smooth paste.
3- Scoop on a sheet of parchment paper and form into 4 or 6 round flat bases (see picture). Reserve in freezer.
4- In a bowl, combine all the ingredients for coconut mixture.
Use your hands to form into 4 or 6 balls with a flat bottom.
Place them on caramel bases and smooth with the back of a spoon. Place the bites in the fridge until solid.
Take out from the fridge around ten minutes before serving.
Top with desiccated coconut.
NOTE / It really makes a difference to use medjool dates rather than any other sort of date for this recipe. They are larger, softer and have
a deep caramel like flavor.
